Mother's Day may have passed, but we're still celebrating because when it comes to delicious home cooking, moms know a thing or two. At Brigade Kitchen we like to shake things up, so today we're sharing a tasty apple pie filling recipe that's as good as the one your mama makes, but done a little differently. Hint, hint...you can use your Brigade Kitchen Sauté Pan for this one!

- 4 cups diced apples
- 2 tablespoons lemon juice
- 1/2 cup sugar, depending on sweetness of apples, to taste
- 2 - 4 tablespoons cornstarch
- 1/2 teaspoon nutmeg to taste
- 1 teaspoon cinnamon to taste
- 1 cup apple juice or water
Preheat your oven to 425 degrees.
Put your diced apple in your Brigade Saute pan over medium heat, and add lemon juice.
Mix sugar, cornstarch, nutmeg and cinnamon into the apples.
Add very hot juice to pan (microwave juice or water for 2 min) and stir constantly until thickened.
Remove from heat and cool.
Fill a well chilled 9" pie crust with filling and cover with top crust.
Place pie in the bottom rack of the oven for 10 minutes, then move to the center rack for 20 more minutes.
