Sweet Potato Breakfast Hash

A new season means new ingredients! Craving fall flavors? Rise and shine all autumn long with our delicious Sweet Potato Breakfast Hash recipe.

  • 3 Tablespoons Olive oil
  • 2 Medium sweet potatoes, chopped in 1/2 inch pieces
  • 1 Medium onion, chopped
  • 1 Medium bell pepper, chopper
  • 1/2 fresh sausage
  • 1/2 teaspon paprile
  • Sea salt & pepper to taste
  • 4 Eggs
  • 2 Scallions, thinly sliced



  • Preheat oven to 400°
  • Heat Brigade Kitchen Skillet over medium heat and add 1 T olive oil
  • Once hot, crumble sausage in the pan and stir until evenly brown
  • Add onions & peppers and cook until they are soft and fragrant
  • Remove from heat and set aside 
  • Over medium heat, add the remaining olive oil to your Brigade Kitchen Saute Pan
  • Add the chopped sweet potatoes and stir to coat
  • Season with paprika, salt and pepper to taste
  • Leave the pan uncovered until the outside of the potatoes begin to brown. Once browned, cover and continue to cook until the potatoes are softened 
  • Add the sausage mixture to the the Saute pan and stir to combine
  • Create 4 indents in the hash, and carefully crack your eggs into those spaces
  • Place Saute Pan in the oven to bake (about 5 - 10 minutes)
  • Garnish with scallions and serve immediately!
